Air Fryer Potato Tacos

In my opinion, there are few things better than taco night. We usually make chicken or ground turkey tacos, but recently I decided to change it up with potato tacos in the air fryer and y'all... I loved them! Now I want to share the recipe with you so you can enjoy them with your family, too.





Ingredients

  • 1 pound gold potatoes (if using large, peel them. If using petite potatoes, no need to peel)

  • 1/2 teaspoon Cumin

  • 1/2 teaspoon Onion Powder

  • 1/2 teaspoon Paprika

  • 1/2 teaspoon Salt

  • Pinch of Cayenne Pepper

  • Pinch of Black Pepper

  • 1/4 teaspoon Garlic Powder

  • 2 tablespoons Olive Oil

+ your tortillas and taco toppings!


How to Make It

  1. Wash and peel your potatoes.

  2. Cut the potatoes into small chunks, about 1 inch pieces (if using petite potatoes, quarter them) and set them aside.

  3. Next, grab a large bowl and mix together the Cumin, Onion Powder, Paprika, Salt, Cayenne Pepper, Black Pepper and Garlic powder.

  4. Once the spices are mixed, add 2 tablespoons of Olive Oil to the spices and mix until well combined.

  5. Now add your potatoes to the oil and spice mixture and stir, making sure the potatoes are well coated with the spices.

  6. Add the potatoes to your air fryer basket and cook them at 380 degrees for 15 minutes, occasionally removing and shaking the basket.

  7. While your potatoes cook, dice up toppings for your tacos and warm your tortillas. We like to top ours with cheese, lettuce, onion, black beans, tomato and sour cream!

  8. Once the potatoes are done cooking, add your potatoes to your tortillas and enjoy!
