As I've said before, I love having big breakfasts on the weekends. My parents came to visit recently and I wanted to do a healthier breakfast scramble and couldn't find a recipe that was exactly what I wanted so I made my own! Hope you enjoy.
Scramble feeds 5
Ingredients:
1/3 Green Pepper, finely chopped
1/3 Red Pepper, finely chopped
1/2 Yellow Onion, finely chopped
1/2 cup cooked turkey sausage crumbles (I used Jimmy Dean's)
1/3 cup diced ham
10 eggs (or use an egg substitute!)
2 tablespoons milk (optional)
Salt
Pepper
Garlic Powder
1. In a large skillet, heat 2 tablespoons of Olive Oil over medium heat.
2. Once hot, add your pepper and onion to the skillet.
3. While the pepper and the onion cooks, crack your eggs and milk into a bowl and whisk until mixed. (I love to add a tablespoon or two of milk to my whisked eggs to make them a little lighter/fluffier)
4. One the pepper is softened and the onion is nearly translucent, add your eggs, turkey sausage and diced ham, stirring often.
5. Add salt, pepper and garlic powder to taste.
6. Enjoy!
Diced potato or bacon crumbles would be also be really good in this! Feel free to add or take away whatever vegetables you would prefer.
