No Bake Energy Bites

I’m a huge fan of quick, easy recipes, and this one has been tried and loved again and again in our house! I make these almost every week because our toddler loves them and they are the perfect grab-and-go snack. These are my go-tos for new mom gift baskets too!


Here’s what you need:

  • 1 cup old fashioned oats

  • 1/2 cup ground flaxseed

  • 1/2 cup creamy peanut butter

  • 1/3 cup honey

  • 1 Tbsp chia seeds

  • 1 tsp vanilla extract

  • Optional: Chocolate chips (I add to half at the end), craisins, raisins, pumpkin seeds, or any other add ins you like!


Let’s make it:

  1. Combine all ingredients together in a large bowl and mix until combined well. Pro tip: it can be helpful to slightly melt the peanut butter before adding it to the mixture (like 10 seconds in the microwave).

  2. Cover the bowl with plastic wrap and refrigerate for one hour.

  3. Remove bowl from fridge and, using clean hands, roll the mixture into 1 inch balls until none remains in the bowl. If you’re like me, you may want to add some of our add-ins halfway through rolling into balls so there is some variation.

  4. Enjoy! Store balls in sealed container in the fridge for up to 1 week.
