Single Serving Baked Oatmeal (Lactation-Friendly)

I'm a huge fan of this recipe year-round, but a little added bonus to this recipe for those nursing is that oats and brewers yeast can be beneficial for your milk supply (this is not the case for everyone but has been for me).


This is a single serving recipe, but it can be doubled or increased as necessary for additional servings.


Let's make it!


Ingredients:

  • 1/2 cup old fashioned oats

  • 1/2 cup milk (I use fat free milk but plant-based milks are great as well)

  • 1 tablespoon nut butter (I use peanut butter but any nut butters are great)

  • 2 tablespoons vanilla protein powder

  • 1 tablespoon brown sugar or maple syrup

  • 1 tablespoon ground flaxseed

  • 1 tablespoon brewers yeast, debittered

  • 1/2 teaspoon baking powder

  • Pinch of salt

  • Chocolate chips (optional)

    • other toppings of your choice could include walnuts, chia seeds, or berries.


Make it:

  1. Preheat oven to 350

  2. Spray a small ramekin or small oven-safe serving bowl with non-stick spray.

  3. In a small bowl, mix all ingredients together.

  4. Pour ingredients into greased oven-safe dish.

  5. Bake for 30-35 minutes or until edges become brown.

  6. Enjoy!


Double or triple the recipe for more servings!
