The Best, Easiest, Healthy Whole Wheat Pancakes

Our weekdays are busy and we rarely have time to sit down and enjoy breakfast together. However, Saturdays are a different story. Every Saturday, we try to carve out time in the morning to cook together and chat over breakfast before we start the day.


Lately, one of our favorite breakfast treats have been these whole wheat pancakes. They are so quick and easy to make!


We use a mix of whole wheat flour and all purpose flour, but you are more than welcome to replace the all purpose flour with whole wheat. They are delicious no matter what batter you use!


 

Recipe


Makes 10, four inch pancakes


Ingredients:

3/4 cup whole wheat flour

3/4 cup all purpose flour

2 tablespoons sugar

1/2 teaspoon cinnamon

1 tablespoon baking powder

1/2 teaspoon salt

1 1/4 cups milk (use whatever milk you want! We usually use fat free or ultra filtered but whole milk or non-dairy works well in this recipe too)

1 egg

4 tablespoons olive oil (you could also use melted butter, we just don't like to use a lot of butter)

1 1/4 teaspoons vanilla




First make the batter.


In a medium sized bowl, whisk together the flours, sugar, cinnamon, baking powder and salt. Set this aside.



Next, mix together your wet ingredients. In a separate bowl, whisk together the milk, egg, olive oil and vanilla.





Pour the wet mixture into the dry mixture and whisk until well blended and large clumps are gone. Don't over mix or the pancakes will be too tough.


Time to cook!


Grab a skillet and heat it over medium heat. Once the pan is hot, spray with cooking oil and dollop the pancake mix onto the skillet. I love using my 1/4 cup measuring cup for this because it creates perfect pancakes!

Note: You can also use butter to grease your skillet, just a personal preference!


Once the pancakes begin to bubble and you can easily slide your spatula underneath, flip them over. Once they are golden brown on each side, they are ready to serve.


These pancakes are quick, easy and perfect for lazy mornings. Top with butter, syrup or fruit and enjoy! I love to top mine with butter and homemade syrup from a friend.
